Skinny Lamb Burgers!

Ok, so I am not a skinny mini- I am your average woman & I say that lightly as I am quite immature. So I am always looking to see how I can make a yummy treat less guilty. I thought about how much I love a classic burger but I couldn’t face eating a whole heavy, bread bun so that’s when inspiration slapped me in the face for my homemade Skinny Lamb Burgers. I tested them out last night for friends & I am so pleased to say that they went down, as a guilt free, yummy treat! Don’t worry they were not plain, they were covered in delicious toppings..

Here is what you’ll need:
500g of minced lamb- this should be enough for 4 large burgers.
x1 beef tomato, sliced
Mozzarella- you can use fresh, sliced or dried, grated- completely up to you.
Salt
Pepper
Dried chilli flakes

Homemade Lamb Burgers

In a bowl, break down the mince lamb & season lightly with some salt. Once mixed through by hand then add pepper & dried chilli flakes. I have a burger press but if you don’t separate mixture into 4 equal balls & press down until to your desired size & thickness. Make sure all are the same so they have a similar cook time. Once ready, place each between foil & leave in your fridge for a 30 minutes to an hour to set a little.

After 30 minutes to an hour take your burgers out & leave to get to room temperature. While they are settling, heat your frying pan with olive oil & once hot, place your sliced tomato in. Season with pepper, turn over & repeat. Once browning & softening take out & place onto kitchen towel to drain off any oil.

Place your burgers into the pan & cook for approx 2-3 minutes on one side. Once ready turn over & cook the other side for 3 minutes. While it’s cooking place sliced of mozzarella on top. If possible place a lid onto the pan & leave until the mozzarella starts melting. Once it has, take the burger out of the pan & serve with a spoonful of pesto on top along with the tomato prepared earlier.

Salad or roasted vegetables are a great accompnient to your yummy Skinny Lamb Burgers. Let’s face it, without the heavy bread you could just have chips 😉
