A Filling Filo Pie

One of the reasons I love cooking so much, good at it or not, is because I love to make others happy. I am certainly a feeder! My partner works away most weeks so I always love treating him to an amazing meal upon his return. When I cook for him & others I feel more care is going into it.

He is currently travelling home as I type so here is what I have made for his dinner after a long journey. Don’t worry, theres beer if the fridge if it’s no good!

Here is a recipe for my Chicken, Bacon & Leak Filo Pie.
(plus a dodgy bow for decoration)

You will need:
x 3 Chicken Breast (3 is perfect for 3-4people)
x1 Onion
x 2 Leaks
Mushrooms
Salt
Pepper
Ready rolled Filo Pastry

For the white Sauce:
Plain Flour (approx 25g)
Milk (approx 1 pint/600ml)
Butter (approx 25g)
Pinch of Salt, Pepper
Grated Nutmeg

alternatively, you can use a sachet of seasoning with milk.

Add chopped chicken & bacon to a hot pan with olive oil & add chopped onion, leak & mushrooms. Leave them to cook through & sweat, be sure to stir them around.

While thats cooking, you can prepare the white sauce. Melt the butter into a pan & add the flour. Cook & stir for a minute or so & then take off of the heat. Gradually add small amounts of milk stirring in as you go until it is a smooth sauce. Place back on the heat & simmer for 8 minutes, add a pinch of salt, pepper & then finely great some nutmeg & stir.

Now the sauce is done, now pour into the pan with the chicken, bacon & leaks. Leave to simmer for a few minutes & add extra pepper if you need it. Then pour into a pie dish.

I am terrible at making pastry so I cheated! Using the ready rolled sheet of filo pastry, place them across the top, sealing along the side. Then glaze the top with either butter or oil.

Place an oven at 200’degrees/180 for an assisted over for around 15-20 minutes. After 15, have a check on the pastry which should be golden brown.

Not a Michelin star recipe but heart warming & not as hard as people think. If i can do it, you certainly can!
