Posh Carbonara

When my boyfriend is away I always tend to be a little lazy and boil up some gnocchi with a tub of carbonara sauce, God I do love being lazy sometimes. But yesterday I decided I would not only make homemade carbonara, I’ll jazz it up as well. This is my recipe for my posh Carbonara…

Ooo I do love a good build up, if I could throw in a drum roll as well I would. This is my recipe for Wild Mushroom Carbonara with Smoked Pancettta and Truffle Oil. Yep, ooo err well posh!

For this you will need:

x 2 cloves of garlic
x 1 sliced red oinion
x 2 thin slices of real butter (If James Martin can do it so shall we)
smoked pancetta (for 4 peole use two of the little packs)
300ml double cream
1 bag of Sainsburys Fresh Tagliatelle
Whites from 1 egg
Wild Mushrooms (Sainsburys pack of fresh wild mushrooms has a perfect variation)
Truffle Oil- 3-4 drops (Aldi have beautiful Truffle oil at a superb price)
Cracked Black Pepper
x 1 Pinch of Cornish Sea Salt Chilli Salt

 

frying pancetta

Firstly throw that delicously naughty butter into a heated frying pan, once melted add the chopped garlic cloves and sliced red onion. Once the onion has softened and sweated in the butter, add all of the smoked pancetta.

Once the pancetta has cooked through add a couple of drops of truffle oil- careful not to add too much as it can be an over powering flavour if you have not had it before. Add the whites of one egg and stir in thoroughly until mixed in with the pancetta and onions.

Then add 300ml of double cream and leave on a high heat for 2 minutes, once bubbling reduce to a lower simmer and add 2 more drops of truffle oil and lots of cracked black peper and a pinch of Chilli Salt

While the cream is thickening on a simmer, add the tagliatelle to a saucepan of boiling water- don’t forget to add a splash of olive oil before adding the tagliatelle for authenic delicious flavour. It’s also great for stopping your pasta’s from clumping together.

It should only take 10 minutes to cook, once drained add the tagliatelle to a large bowl followed by your carbonara sauce- do a little dance because it looks smashing!

When serving garnish the dish with  cracked black pepper. If you are serving this posh nosh for a dinner party or you’re on Dinner Date trying to impress, add a garnish of corriander or rocket.

Take a bow, you have served up something so good even the Queen, Victoria Beckham may eat it!
