A Greek twist on a Mexican wonder

It is amazing how easy it is to change flavours just by changing a single ingredient. Spicy fajitas are one of my favourite easy meals for the weekday evenings but I thought it would be amazing to mix it up slightly. Instead of having the standard chicken or beef I decided to put a slightly Greek twist into a Mexican wonder. Don’t worry, it’s packed with yummy veg too!

Here is what you’ll need:
Diced Lamb (or lamb steaks chopped into roughly the same sized cubes)
Augerine
Button Chestnut Mushrooms
Sweet Peppers
Red Onion
Sweet Gem Lettuce
Crumbled Feta Cheese
Cayenne Pepper
Black Pepper
Paprika

I won’t explain in huge detail how to make fajitas as it really is the simplest meal but just to fill space-  let’s do this!

Add a splash of olive oil to a hot pan & then throw in the diced lamb. While that’s browning cut all of the vegetables into strips & add to the frying lamb. Add the cayenne pepper, black pepper & paprika & leave to cook for a few extra minutes. In this time you can set up sauces you want to add and your tortilla wraps. Yep-its all this simple, don’t you dare tell me you don’t know how to cook.

Pop all of your sides on the table & let everyone grab away! You’ll love the flavour change with the beautifully spiced lamb. Such a classic with just one change to change the flavour completely.
