It’s Steak Night, We Gonna Eaaaat Right!

Steak night is my favourite night and man, did we eat it right! Let’s sing it guys- “alright it’s steak friday, I’m gonna eat all… someday”. Alright, I’m not the rhyming type but I get my point across I hope?

This beauty of a steak was especially cold smoked over hickory chipping’s just for my belly & it smells fantastic & I’d like to thank Padstow Smokehouse. But if your thinking of cooking a proper steak for your family or friends then you need to know how to griddle it perfectly.

Firstly, make sure you leave your steak out of the fridge for about 20-30 minutes until room temperature. In this time you can oven roast some gorgeous vine tomatoes. Place them onto a baking tray with a hearty splash of olive oil, grated garlic, pinch of salt & a good covering of freshly ground pepper. Leave in over at 190 degrees for approx 20 minutes or until browning slightly on top. My oven can be temperamental so it can vary.

I’ve used an alluminium griddle today because it heated up quickly (& I was starving). While your griddle is warming up to high heat it’s time to season your steak. I know what your thinking, “errrr why do that if its already smoked it’ll ruin it”- my friends I promise you, if you season this way every time, you’ll enhance that wonderful, meaty flavour whether yours is running off of your plate or like a block of charcoal.

Don’t put some olive oil directly into your griddle, rub a splash on either side of your steak & season with sea salt & freshly ground pepper. Once the griddle is at the perfect hot heat then place your steak slice into it. If you want your steak rare like I do mine, then cook on each side for 1 minute 30. If you want that awesome crossed lines then turn it half way through at a 45 degree angle. Of course if you want yours medium or well done it is always worth checking as different size steaks vary.

Place into a warm plate with your vine tomatoes & some chips or homemade wedges- classic- you are ready to go.

Of course, if you’re really going to do steak night properly make sure you have a fresh, crisp glass of wine to go with it- well.. we wouldn’t want to over do with a dessert would we?
